I love baking with summer fruits - and this week I got inspired when I had one ripe nectarine to use and a container of peach yogurt that got opened but not eaten (ahem, fickle breakfast-eating child I was caring for...) So I decided to make muffins! These are extra moist because of the yogurt and are studded with delicious chunks of peach (or nectarine as it were).
Start by combining the egg, yogurt
and sugar in a large mixing bowl, and beating until well blended. Add in the flour,
baking powder, salt and nutmeg and beat just until combined. Measure the half and half and add in the vanilla, and add this to the muffin batter,
beating until the liquid and the dry ingredients are incorporated. Add the peaches, and stir to combine.
Grease muffin pans or use liners - we made mini muffins cause I was working with a preschooler, and mini muffins are just more fun!!! (They're also more dangerous in my opinion, cause it's easy to keep poppin' 'em in your mouth...)
Bake for 17 minutes. Let them cool in the pan for a couple minutes, then carefully remove from the pan to a wire rack. Cool completely.
These are absolutely delicious as is, and when topped with cinnamon and sugar (like the
cinnamon sugar muffins), they are extraordinary.

Peaches 'n' Cream Muffins
3/4 cup sugar
1 egg
1 1/2 cups flour
2 tsp. baking powder
1/4 tsp. salt
1/4 tsp. nutmeg
1 - 6 oz. container peach yogurt
1 tsp. vanilla
3/4 cup half and half
1 medium nectarine or peach, peeled and diced
In a mixing bowl, beat together egg, yogurt and sugar. Add the flour, baking powder, salt and nutmeg; beat just until combined. In a measuring cup, combine half and half and vanilla; add to flour mixture and mix well. Fold in peaches.
Pour into muffin cups or mini muffin cups lined with papers or sprayed with nonstick cooking spray. Bake at 350 for 17 minutes or until toothpick comes out clean. Cool completely on a wire rack.
Makes approx. 16 muffins or 36 mini muffins
