As the weather turns cooler, I get the urge to start baking again. And this was a great recipe to start with - a super easy quick bread studded with delicious apples and finished with an easy glaze. This bread doesn't require a mixer, and it has no oil or butter! Bonus - you don't need to peel the apple! I don't know about you but I don't like peeling fruit - except oranges and bananas, ha!
For this bread, simply combine the dry ingredients in a large bowl, add the apple, applesauce, vanilla and milk...and stir just until combined. Pour into the pan and bake!
For the glaze, I made a simple powdered sugar glaze and added the leftover applesauce to liven it up a little. (When I bake with applesauce, I use those little individual cups. There was enough to put in this recipe, and then use the little bit left for the glaze.)
This is perfect for a mid morning or afternoon coffee break, as you admire the changing leaves!
Autumn Apple Bread
2 tsp. baking powder
3/4 tsp. salt
1/2 tsp. baking soda
3/4 tsp. cinnamon
3/4 cup sugar
1 cup milk
2 tsp. vanilla
3 1/2 Tbsp. applesauce
2 cups finely diced apple
In a large bowl, combine the flour, baking powder, salt, baking soda, and sugar. Stir to mix well. Add in the milk, vanilla, and applesauce and stir until combined. Fold in the diced apple.
Spread mixture into a 9x5 loaf pan and bake at 350 for about 50 minutes or until a toothpick comes out mostly clean. Cool in the pan on a wire rack. When cool, carefully turn out of the pan.
If you like, you can make a glaze using about 1 cup powdered sugar, 2-3 Tbsp. milk or half and half (start with 2 and add more if you need it to get the right consistency) and 1-2 teaspoons of applesauce. (You can also leave out the applesauce.) You want a glaze that's not too runny so it stays (mostly) ON the bread....
