Peanut Butter Banana Bread


As I've mentioned before, the more varieties of banana bread you have to choose from, the better. At least in my opinion. And again, in my opinion, this is one of the best. Peanut butter and bananas? In a form that you can eat for breakfast? Yes, please.

You'll need your mixer for this, but it comes together quickly. Combine the bananas, yogurt,


butter, peanut butter,


and eggs in a large bowl. Beat until creamy. Add the sugar and brown sugar,


and mix until well combined. Then add the flour, baking soda, salt, cinnamon


and allspice. Beat just until all the ingredients are incorporated. Stir in the chopped peanuts.


Transfer the batter to a greased loaf pan and bake for an hour or so until the top is golden and a toothpick comes out clean. Cool in the pan for 10 minutes, then remove and cool completely on a wire rack.


Now for the really good part - the peanut butter glaze!! In a small bowl, combine the powdered sugar, peanut butter


and milk. Whisk until smooth, then drizzle over the cooled bread.

and it tastes as good (or better) than it looks. And the best part? It's a Cooking Light recipe. So you can eat several slices at a time...

Peanut Butter Banana Bread

1 1/2 cups mashed ripe banana (about 3 small)
1/3 cup plain or vanilla yogurt
1/3 cup creamy peanut butter
3 Tbsp. butter, melted
2 large eggs
1/2 cup granulated sugar
1/2 cup packed brown sugar
1 1/2 cups flour
3/4 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
1/8 tsp. allspice
2 Tbsp. chopped dry-roasted peanuts

Glaze:
1/3 cup powdered sugar
1 Tbsp. milk
1 Tbsp. creamy peanut butter

Beat together the bananas, yogurt, peanut butter, butter and eggs at medium speed until combined. Add sugars and beat until blended.

Add the flour, baking soda, salt, cinnamon and allspice. Add flour mixture to banana mixture; beat just until blended. Stir in nuts. Scrape batter into a greased loaf pan.

Bake at 350 until top is golden and toothpick inserted into center comes out clean, about 1 hour 5 minutes. Cool in pan 10 minutes, then transfer to wire rack and cool completely.

To make the peanut butter glaze, in a small bowl whisk together powdered sugar, milk and peanut butter until smooth. Drizzle glaze over bread.
